La Vecchia Scuola Bolognese, founded by Alessandra Spisni in 1993, is the only school in the world that forms sfoglini (pastry makers).
The school philosophy is the defense and proposal of the Bolognese enogastronomic tradition, which has always been appreciated throughout the world (let's think about the Spaghetti Bolognese, which are present in the restaurants menus all over the world!), convinced that such a theme is able to bring to the city people from everywhere. As for this, Alessandra is rigorous in the choice of ingredients, all from the territory as well as of absolute quality and in the execution of the recipes during the courses.
The School organizes professional and amateur courses of pastry, kneaded and pulled by hand, fresh pasta, Bolognese and traditional cuisine, bread and cakes. Demonstrations of pasta making, dedicated to tourists or schools, can also be held.
The courses and demonstrations can be completed by the tasting of the prepared food or some traditional dishes.
The courses are taught by Alessandra Spisni, Alessandro Spisni, Stefania Canalicchio, Alessandra's daughter and other teachers.

The tasting of typical products and traditional cuisine takes place in the large country kitchen built in the school’s main room.

Fast and good – mouth-watering food even on a short lunch break. From breakfast to dinner we spoil you also with snacks and small meals. Your home kitchen – always at your disposal – Monday through Saturday, nonstop from 10:00 to 22:00.
