Fried meat:

  • lamb cutlets

Fried cheese:

  • small cubes of Emmenthal
  • cheese - whole Mozzarella cheese balls

Fried vegetables:

  • courgettes
  • artichokes
  • potato croquettues
  • cauliflowers
  • courgette flowers
  • aubergines
  • mushrooms
  • fennels
  • green tomatoes
  • acaca flowers

Sweet fritters:

  • fried custard
  • apple fritters
  • semolina fritters
  • ricotta
  • croquettes
  • rice fritters
  • amaretti


Strain the meat and cheese ingredients in a beaten egg with some salt and then in breadcrumbs, making sure that the breadcrumbs stick well to the ingredients, finally fry in seed oil or, if you prefer, in olive oil.
To prepare fried vegetables and sweet fritters it is better to use a batter, mixing 250 g flour with 2 yolks, one tablespoon of oil, a pinch of salt, 2 dl beer and beaten egg whites (another version is the following: flour, milk, yolk, beaten egg white of one egg, salt), dip the small pieces of vegetables, fruit and the sweet ingredients in the batter before frying them.
