Il Rovescio stands in the heart of Pratello, Bologna's most bohemian neighborhood. This tavern,opened in 2008 based on an idea developedby Stefano Mattresses and Pasquale Giordani, offers diners the chance to enjoy local organic cuisine and authentic flavors in anintimate and unpretentious setting. Il Rovescio, the fruit of a paradox that has become the philosophy underpinning all our menu choices: we don’t do the shopping according to the menu, we build the menu according the seasonal raw materials offered by our small-scale local producers on a monthly basis, in keeping with the genuine rhythms of nature. Most of the ingredients we use in our kitchen come from organic and biodynamic farms. The menu changes on a monthly basis, with dishes made with fresh local produce. Vegetarians and vegan dishes represent an important part of the menu, not simply an alternative;these dishes reflect a careful process of selection and combination. Our well-chosen wine list privileges natural, organic, biodynamic and vegan wines produced with respect for seasonal cycles, the earth, the vines and local traditions.
