One of the main features of the Berber pizza is the high digestibility, obtained with the use of only live sourdough and with a leavening of 24 h at a controlled temperature. Soft inside and crunchy outside, the pizza is served already cut into 8 slices to stimulate sharing between diners. In addition to the classic dough, made every day by hand starting from water, yeast and stone-ground organic semi-integrated flours, you can also find some alternatives of the day with cereals other than wheat (enkir and spelt) or with starch hydrolysis, an ancient leavening technique, totally free of added yeasts. In addition, from Monday to Friday there is a 10 euro lunch formula that includes pizza of the week or margherita, drink or small beer, covered and coffee.
