Michael White is the chef and an owner of Marea, along with Alto and Convivio, in New York.

Mr. White arrived in New York in 2002 as the chef at Fiamma in SoHo, and showed himself to be an extraordinary practitioner of pasta. Later, he teamed up with Chris Cannon to make Alto a shrine to northern Italian food and L'Impero, now Convivio, a gallery for the best of that nation's south. He cooks Italian food as if it were purely American: big and bold.

Formerly the chef de cuisine at Spiaggia in Chicago and at Ristorante San Domenico near Bologna, Mr. White stays firmly rooted in the core principles of Italian cooking, putting prime ingredients on a sparely designed stage and letting them speak with minimum interference.

Mr. White and his partners will add another restaurant, Ai Fiori, to their collection in 2010.
