Il Rovescio pizza bio was born in 2013 in the heart of Pratello from our passion for baking. For making pizza we use ancient grain flours and for the toppings seasonal ingredients.
The lengthy, 48-hour-long rising time using sourdough starter produces an easilydigestible pizza that is fragrant and well-balanced. You can choose among three different doughs: traditional, dough made with vegetable charcoal or hemp, and the mix of the day.
The pizza menu changes every three months with the changing of the seasons and privileges a mix of vegetables to ensure a unique flavor experience.
