Alce Nero – Berberè opened in 2013 in via Petroni in the heart of Bologna, the intersection of the young path of Berberè with Alce Nero’s 35 years of experience as the leading brand of Italian organic products.
Other than the pizzeria – characterized by the use of exclusively organic ingredients – the restaurant hosts a shop with organic products, which customers can purchase before or after their meals.
One of the principle characteristics of Berberè pizza is the substitution of leavening with natural maturation: we don’t use chemical yeast, but rather living sourdough. This maturation process lasts at least 24 hours at room temperature and not in the refrigerator (hence it is “slow” pizza). Thanks to the skill of our pizzaioli and their passion for what they do, the quality of the base dough obtained with the starter and semi-whole grain stone-ground flours guarantees a high digestibility and a distinctive flavor, while the selection and mixture of flours other than wheat (spelt, enkir, kamut) offers alternatives that are interesting and diverse from an organoleptic point of view. Berberè’s pizza is therefore lighter, healthier, and better.
And to optimize the digestibility of the pizza, the chefs at Berberè have successfully experimented with an innovative fermentation method, completely free of yeast, based on the physical process of starch hydrolysis. The toppings of our pizza enhance the flavor of the ingredients, respecting and “transforming” them as necessary, without altering their original taste. The choice of organic seasonal ingredients, linked together in classic and innovative combinations promotes healthy, balanced eating; and their qualitative excellence – the result of a careful selection of producers across various regions – guarantees exceptional taste.
Like the original location in Castel Maggiore, this branch boasts 60 seats distributed in two different spaces, an open kitchen and wood-burning stove, the wall murals of TO/LET and the art of Pastore e Bovina.
