With its delicious taste and its unique aroma, Mortadella has become one of the symbols of Bolognese cuisine worldwide. To celebrate this succulent cold cut every year the small town of Zola Predosa, the heart of mortadella production area, hosts an International festival dedicated to the "pink queen" of the bolognese food tradition. On the occasion the centre of Zola becomes a “Cittadella del Gusto” (Taste Citadel), where to try mortadella-based recipes, like the green lasagne with mortadella ragu or the cutlet garnished with mortadella. To drink the choice is between Pignoletto and other wines from Colli bolognesi (Bologna hills). During the festival Mortadella plays a lead role also in the street food booths, in the market stands, in the live cooking show (featuring Roberto Perugini from Masterchef Italia 6). On Sunday Morning is also possible to join a guided tour to some of the most important production plants, to learn how Mortadella is made.
