In the heart of Bologna, Le Salsamentarie is an exhibition of top quality charcuterie and of the art of dairy products. Italian cold cuts and cheeses, and most importantly the meat sauce, will be the main actors of this food and wine event. It will be possible to taste and purchase jars of the traditional meat sauce of the Bolognese recipe, as well as to observe the "cesarine" roll out the dough and give advice to the visitors interested in the ancient art of the "sfogline". The event aims to enhance the knowledge and flavours that have always distinguished the association of the Salsamentari, which draws its origins from the Art of the Salaroli, established in Bologna in 1250. The History of the Salsamentari is directly linked to that of the most famous Bolognese food specialty: the meat sauce. This second 2018 edition of Le Salsamentarie is enriched in fact by another important event, which is also included: the Meat Sauce Festival, with the aim of describing anecdotes, history and flavours of the most famous local specialty to the country and the world itself. On the sidelines of the festival the Grand Ball of the nineteenth century will take place in Piazza del Nettuno at 5 pm on Saturday 22nd September. The dancers will bring back to life the fascinating atmosphere of the society celebrations of the time, by dancing quadrilles, waltzes, contredances, mazurkas and polkas on the music of great Italian and foreign composers, such as Verdi and Strauss.
